When we were looking for a source for the beef to serve at Tjanabi - I went back to our three core values: Hospitality; People and Country. At the same time, I had the pleasure of meeting two wonderful farmers from Phillip Island, Bob and Anne Davie.
Bob and Anne had been part of a group who had developed a system for producing high quality beef [MSA Graded] in conjunction with an accredited environmental program for managing the production of their beef cattle. Their beef cattle are all grass fed, free range, free from artificial hormones and managed against strict animal husbandry standards. However, it was their approach to managing and caring for their environment that impressed me most. They had become true custodians of the land - not only respecting its Indigenous heritage and history - but working to preserve and protect the area for future generations.
Along with a small group of farmers, they had developed a brand for their environmentally certified beef - "ENVIROMEAT". So just over two years ago, we made a decision to only serve "Enviromeat" at Tjanabi. In addition to its environmental credentials - this is some of the best steaks you will ever taste.
When we serve a steak at Tjanabi - we are proud of the fact, that we can not only guarantee that it is MSA Graded for tenderness - and that its production was certified against strict environmental standards - but we can tell of about the farm it came from, the name of the farmer and the name of the Butcher who prepared it for us.
All the beef served at Tjanabi is prepared and purchased from an old fashioned friendly butcher - "Josh". Josh owns Glenferry Gourmet Meats - and is located on Glenferry Road, Hawthorn. Josh also produces some of the best sausages in Australia - all the beef he sells at his butcher shop comes from Enviromeat Producers. When you visit Josh at Glenferry Gourmet Meats - tell him Tjanabi sent you.
This year we have decided to bring the farmer closer to our Restaurant. Bob and Anne have generously offered to be our "Quality Assurance Mystery Shoppers". Each month they will make a couple of unannounced visits to Tjanabi and sample our beef. They will provide us with feedback on the tenderness, taste and presentation of their steaks and other beef dishes.
